Chilled Cantaloupe Soup

Ingredients:

  • 3 med-lrg Cantaloupe
  • 1/2-3/4 ctn. Large Yogurt
  • 1qt. Orange Juice
  • 3oz. Honey
  • TT Nutmeg
  • TT Cinnamon
  • TT S&P
  • 2ea Juice of lemons
  • 2ea Juice of limes
  • 1cup Whipping Cream
  • 1oz Fruity Liquor- Melon, Triplesec, Kirshwasser
  • T Sugar
  • 1 bu Mint leaves
  • Yields app. 1 Gallon

Procedure:

1Place a small metal mixing bowl it the freezer to chill.

2Peel and deseed cantaloupes. Cut into pieces to fit into food processor. Puree in small batches adding yogurt and honey. Place into gallon pitcher. Add orange juice, nutmeg, cinnamon, and s&p. Stir everything together, Check seasoning and adjust if necessary.

3Take mixing bowl out of freezer. Place whipping cream in bowl and start whipping. When soft peaks form, add sugar and liquor. Continue to whip till peaks become stiff. DO NOT over whip.

4Pour/Ladle soup into serving bowl, place a dollop of whipped cream in center of bowl, place a mint leave in the cream and serve.
